PROBLEM TO BE SOLVED: To provide a flavor capable of imparting foods/drinks with strong aroma rich in fanciness, and to provide a method for producing the flavor. SOLUTION: This method for producing the objective flavor is characterized by comprising the step of reacting a mixture comprising amino acid(s), saccharide(s) and a solvent under heating at reduced pressures in a thin-film form and directly isolating the thus formed flavor by distillation. |
