摘要 PURPOSE: Provided is a meat curing apparatus in which a curing liquid in two meat curing tanks can be automatically moved by the pressure difference caused by vacuum and pressure and the curing process is alternatively performed by use of the two meat curing tanks. The meat curing method permits curing of meat within a short time of about 20min and recycling of waste curing liquid by filtering. CONSTITUTION: In a first process, meat is inserted into a conveying net(18) and tightly stored in a first meat curing tank(1), a curing liquid is tightly stored in a second meat curing tank(2) and a curing liquid storing tank(7), a vacuum pump(6) is operated to make the interior of the first meat curing tank vacuous. The curing liquid is automatically transferred to the first meat curing tank(1) from the second meat curing tank and then filled by the pressure difference between the first and second curing tank, and the curing liquid in the curing liquid tank is forcibly transferred into the first meat curing tank. In a second process, another meat is inserted into another conveying net and tightly stored in the second meat curing tank and then a subsequent processing process is successively continued according to the same method as the first process.
