PROCESS FOR PREPARING IMMATURE APPLE CONCENTRATE CONTAINING A LARGE AMOUNT OF POLYPHENOL AND THE USE THEREOF

PURPOSE: A process for preparing an immature apple concentrate containing a large amount of polyphenol and the use thereof are provided, thereby cheaply and easily extracting polyphenyl from the immature apples. CONSTITUTION: A process for preparing an immature apple concentrate containing a large amount of polyphenol comprises the steps of: (a) pulverizing immature apples and heating them at 50 to 60 deg. C for 20 to 30 minutes; (b) filtering the heated juice and concentrating it under reduced pressure; and (c) heating the concentrate thereof at 90 to 95 deg. C for 20 to 40 seconds, wherein the concentration is carried out at 50 to 60 deg. C; and the freeze-drying process is further carried out after the sterilization process of the step (c).
