PURPOSE: An ageing apparatus containing a metal vessel coated with ceramic for receiving an object to be aged to inhibit the growth of lactic acid bacteria at the inside of the vessel is provided, thereby conducting uniform and quick ageing and increasing freshness of the object. CONSTITUTION: This ageing apparatus comprises; a metal vessel(10) having a circular type space part(12) tapering down to the lower side to receive an object to be aged; an ultrasonic wave generator(40) mounted on the exterior on one side of the metal vessel to generate ultrasonic waves; an ultrasonic vibrator(50) adhesively mounted on the inner wall surface(14) of the metal vessel and connected to the ultrasonic wave generator to irradiate an object to be aged with ultraviolet waves; and a control part(60) mounted on one side of the ultraviolet generator to control the ultraviolet generator.
