PROBLEM TO BE SOLVED: To obtain fruit jam or fruit sauce keeping a fresh vivid aroma of the fruit. SOLUTION: This method for producing a fruit jam or a fruit sauce comprises mixing a fruit with a sweet saccharide, an acidulant, a stabilizer and other additives to give a mixture and heat-treating the mixture. Firstly the mixture of the fruit not containing the sweet saccharide is prepared, then subjected to a heat treatment of heating to 55-75 deg.C at 1-12 deg.C/minute average heating rate and then mixed with the sweet saccharide with stirring. |
