PROBLEM TO BE SOLVED: To provide a method for producing a mushroom powder highly containing β-d-glucan, as a method for producing a dried product of a mushroom by which an inconvenient part is improved when the dried product is evaluated and used by using an effective component as a standard. SOLUTION: The dried product of the mushroom belonging to the family Polyporaceae is made to include mushroom essence highly containing the β-d- glucan, and the resultant mushroom is freeze-dried to stably produce the mushroom powder without causing the heat denaturation of contained components. As a result, the mushroom powder obtained thereby has an effective reduced bacterial count without using a conventional degerming method (mainly the method by heating or by using a chemical material). Accordingly, the safety of the mushroom powder as a food product is heightened. |
