SUBSTANCE: antocyanic dye comprises, wt %: cyanidine glycosides, 0.1-8.6; pionidine glycosides, 0.08-6.45 pelargonidine glycosides, 0.05-4.3; organic matter and mineral salts, the balance. Pelargonidine glycosides: peonidine glycosides cyanidine glycosides ratios are 1: 1.5: 2, respectively. Relative optical density of dye is at maximum when it is exposed to light with wavelength of 505-515 nm. When exposed to medium having pH from 2.0 to 7.0, dye retains natural red light. Dye retains 80-100 % of its natural color density during all treatment operations, namely freezing, boiling, radiation by direct solar light within pH range of 2 to 4.
