摘要 PROBLEM TO BE SOLVED: To provide a system for efficiently and continuously producing square bean curd delicious and lasting long by using only magnesium chloride as an agent having coagulation action on soybean milk and securing efficient aging period of time. SOLUTION: This system for coagulating and aging soybean milk works under such a mechanism as to comprise adding magnesium chloride into cold soybean milk supplied from a cold soybean milk vessel, mixing the resultant by a mixer, feeding the mixture into a pipeline being heated so as to coagulate the soybean milk into bean curd and releasing the soybean curd from the outlet of the pipeline; wherein the section of the inlet inside the pipe line is circular and the section of the outlet inside the pipeline is square, the areas of both the sections are equal to each other, a device for heating the soybean milk is set between the outlet of the cold soybean milk vessel and adding position for the magnesium chloride and a plurality of coagulating and aging lines each comprising a transport pump, an adding position for the magnesium chloride, a mixer and a pipeline are set from the outlet of the soybean milk vessel through branch pipes.
