The butcher's knife (1) has a replaceable blade (2) locked into the handle (4) within a grooved holder. The stem (3) of the blade (2) has a holding profile to give a positive fit within the holding profile in the handle. The handle (4) has a locking slide which secures the fitted blade (2) within the blade holder. The locking slide, at the handle, covers the blade holder and secures the blade stem (3) in it. The locking slide is recessed into the handle (4) so that its outer surface is flush with the handle (4) body surface. The locking slide has a swallowtail profile, which works together with a swallowtail guide profile in the knife handle (4) body. In the closed position, the slide body locks into the end of the guide cut-out with a chamfered edge. The width of the blade holder is set so that, when the locking slide is opened, the stem (3) of the blade (2) is held by a side tension. The blade stem (3) lies only partially within the holder, and has a projection which is inserted into a cut-out which acts as a counter surface to swing the blade (2) against the resistance of the fit of the stem (3) into the holder. When the locking slide is moved, an additional tension is applied to the blade (2) in the handle (4). The leading end of the blade holder at the handle (4) has sealing lips, which press against the sides of the blade (2) or its stem. The knife handle (4) and the locking slide are of a thermoplastic material, preferably reinforced with glass fibers.
