A food material having low content of volatile N and S compounds, acrolein, ethyl carbamate and dissolved Cu, and low acidity, is new. An Independent claim is also included for the process of production of the novel material, comprising: (a) distillation conducted in block of 4 sections column A of distillation, column B of degassing, concentration column C and Lutter column D, receiving reflux from concentration column C; (b) acidifying of fermented must; (c) neutralizing alcoholic vapors in column C; and (d) extraction of head fractions from column C, in units T1 and/or T2. The process is applicable to distilled fermented musts including wines for production of brandies - Armagnacs, fermented must of cane or cane molasses for production of rum, ciders for production of cider spirit and Calvados, cereal must for production of whiskies, and musts of various amylaceous matters and sugars, for production of vodkas.
