PROBLEM TO BE SOLVED: To obtain a fermented beverage having mellow taste, excellent in flavor and useful for natural health fermented beverage, or the like, by treating a raw material containing a cereal extract under specific conditions. SOLUTION: (i) A raw material containing a cereal extract such as wort at early stage of fermentation is treated with lactobacillus and yeast or a yeast solution and (ii) the treated raw material is treated with an acetic bacterium such as Gluconobacter oxydans ssp. Industricus capable of metabolizing carbohydrates produced by lactobacillus, and (iii) a part of carbohydrates contained in the cereal as the above raw material and contained in the product of the step (i) not usually being fermented is changed to gluconolactone in the treatment by using biological method is the step (ii), and then, (iv) a product obtained by above steps is processed by a conventional method to provide the objective fermented beverage. Furthermore, it is preferable that the fermented beverage is an alcohol-free beverage or a beverage containing an alcohol. |
