PROBLEM TO BE SOLVED: To provide a method and an apparatus for production of frozen sweet such as ice cream, frozen candy. SOLUTION: In the method for production of frozen sweet, raw materials for frozen sweet are frozen in a first cylinder part of a continuous freezer consisting of connected two cylinders, the frozen raw materials are ejected, and remaining raw materials for the frozen sweet such as a high sourness material, a material to which imparting of heat history is undesirable and/or a material having specific flavor are supplied between a first cylinder and a second cylinder and then frozen again in the second cylinder. In the apparatus for production of frozen sweet, a pipeline from a supplier which supplies the remaining raw materials for the frozen sweet such as the high sourness material, the material to which imparting of heat history is undesirable and/or the material having specific flavor, is connected to a pipeline connecting the first cylinder and the second cylinder of the connected two cylinders of the continuous freezer. |
