PROBLEM TO BE SOLVED: To shorten a meat-processing method, suppress the proliferation of microorganisms to improve the quality of meat and permit the meat to be stored for a long time by using reduction-treated water during the meat- processing process. SOLUTION: This meat-processing method comprises a step where frozen meat is thawed by soaking it in reduction-treated water and a step where the thawed meat is disinfected with strong acidic water. The reduction-treated water is prepared by irradiating water with far-infrared rays emitted from a glass composition consisting of 50-99 wt.% of a known glass composition including SiO2, B2O3, P2O5, Al2O3, R2O (where R is Li, Na, K), R'O (where R' is Mg, Ca, Ba) and 1-50 wt.% of quartz-feldspar porphyry or 1-50 wt.% of magnetite. |
