PROBLEM TO BE SOLVED: To obtain an edible oil containing enriched α-linolenic acid which is an n-3 type polyunsaturated fatty acid, and excellent in oxidation stability, dish suitability, and flavor. SOLUTION: This edible oil is obtained by adding an oil and fat with high oleic acid content in which the content of the oleic acid is >=60 wt.% to a flux oil in which the content of α-linolenic acid is >=50 pts.wt. and the content of the trans type fatty acid is <=4 wt.%. The weight ratio of the oleic acid to the α-linolenic acid is adjusted so as to be 1:(0.2-0.6), and the content of the α-linolenic acid is >=10 wt.%. |
