The device comprises a shaping roller (1) having opposed side handles (2). There are a number of discs (5) projecting from a central body (3), extending around its periphery. Shaping elements (4) project from the central body. An apparatus for using the device comprises a support frame and a conveyor belt extending between rollers, defining a movable conveyor for supporting portions of bread dough in a movement direction. The above claimed shaping roller (1) is disposed above the movable conveyor and is freely rotatable on the handles (2) which are formed as pins and bear on the frame at the sides of the belt parallel to the movable conveyor. The cylindrical surface is disposed at a predetermined distance from the movable conveyor so that bread dough interferes with the shaping roller whilst supported on the movable conveyor. A method for shaping the dough using the shaping device is also claimed, involving rolling a portion of dough with the shaping roller with a pressure so as to impress lines of weakening and predetermined patterns in the dough. The dough is cut to produce bread shapes.
