PROBLEM TO BE SOLVED: To obtain an emulsifying agent, capable of preventing the flat sour rancidty according to a usual sterilization treatment and further physical and chemical changes in a beverage containing a milk component by addition thereof to the beverage, by including a mono-fatty acid ester of a polyglycerol as an active ingredient therein. SOLUTION: This emulsifying agent comprises a mono-fatty acid ester of a polyglycerol as an active ingredient. The polyglycerol part, is a tri-, a tetra- and a entaglycerol. The fatty acid part is a mixture of one or more of lauric acid, myristic acid, palmitic acid and stearic acid and the total amount thereof is >=70wt.%, preferably >=90wt.% and the monoester content in the ester mixture is >=50wt.%. |
