The evaporator has a passage (16) formed between the plates carrying the refrigerant through the evaporator. The passage allows insertion of a temperature transducer (17,19) parallel to the direction of stacking of the plates. The evaporator is traversed by a transverse air flow (F). The temperature transducer is behind the row of plates that face the incoming air. Pairs of plates adjacent to the passage are sealed by a peripheral groove (18) formed at the periphery of each passage and oriented toward the interior of the cavity. The seal is made by welding or brazing.
