PROTEASE HAVING OPTIMUM LOW-TEMPERATURE, MICROORGANISM PRODUCING THE PROTEASE AND PRODUCTION OF THE PROTEASE

PURPOSE: To obtain a protease having an optimum active temperature at a low-temperature region and hardly inhibited even by various kinds of surfactants. CONSTITUTION: This is a protease of optimum low-temperature having the following enzymatic characteristics. 1. Active temperature and optimum temperature: It is active at 0-60 deg.C and the optimum temperature is between 25-30 deg.C. When Ca<2+> ion coexists, the optimum temperature increases to 50 deg.C. About 20-30% of the activity at the optimum temperature is kept even at 0 deg.C (in a ice-water). 2. Temperature stability: The stability is kept up to 40 deg.C under a treating condition of pH 7.0 and 15min. When Ca<2+> ion coexists, it is stable up to 50 deg.C. 3. Active pH and optimum pH: It is active at pH 5-10. The optimum pH is about 7.0. 4. pH stability: It is stable at a pH value of pH 5.8-9.8 under a treating condition of 20 deg.C and 15min.
