A process for producing spirits from fruit, berries or a mash, in a water bath distillery, comprises supplying air into the distillation appts. during the distillation process. The air is supplied over a region from the mash container (2) to immediately before the cooler. The appts. used pref. consists of a water bath (1), a fine distillation column (5), a mash container (2), and an air supply pipe (4).
