摘要 Described is a process for preparing a cheese curd-whey mixture with a predetermined mass of cheese curd wherein the cheese-curd-whey mixture is delimited by volume. In one preferred variant of the process this is done by completely filling a predetermined volume (V(H)) with a cheese curd-whey mixture (K/M), then weighing the entire mass of cheese curd-whey mixture (K/M) present in the volume (V(H)) and from the measured weight, using standard density values P(M) and P(K) for whey and cheese curd, respectively, deriving a mass of cheese curd (m(K)) contained in the total mass and comparing this with a required cheese curd mass (m(F)); depending on the result of the comparison, the amount of cheese curd in the volume V(H) is increased or decreased, with continuous weighing, until the requisite mass of cheese curd (m(F)) is present in the volume (V(H)). The device for carrying out the process is characterized, inter alia, in that a container (1) along with its contents is weighed using a scale (5; 50) and that the volume (V(H)) of the container (1) is limited by a first or second overflow device (3; 4), each of which has a discharge aperture (3b, 4b, respectively), the first device (3) at an open surface (1a) of the cheese curd-whey mixture (K/M) in the container (1) and the second (4) in the base region (1b) of the container (1).
