PURPOSE: To stably produce optically active phenylalanine anhydride having excellent handleability. CONSTITUTION: An inorganic salt is added to an aqueous solution containing optically active phenylalanine anhydride and the aqueous solution is adjusted to >=10,500-450T+4.4T<2> (T is crystallization temperature) osmotic pressureπ(mOsm/kg water). Optically active phenylalanine is crystallized and precipitated to collect phenylalanine anhydride crystal. Optically active phenylalanine anhydride crystal having excellent separability can be stably collected by the method. Since the crystal can be collected at a lower temperature range than a conventional method, improvement in yield can be expected and this method has a big advantage in an industrial production.
