摘要 A spirit liquor is prepd. by fermenting water, spelt or green rye and yeast, followed by distn. Pref. the cereal is threshed, hulled, rough ground and stirred with water, followed by addn. of yeast and fermenting at rest for 3-4 days at 25 deg C, before distn. After grinding, the cereal may be stirred with water at raised temp., pref. 80 deg C, followed by cooling to fermentation temp. of 25 deg C before addn. of yeast. Malt may be added to the cereal after stirring with water. The cereal may be dried before threshing.
