PURPOSE:To obtain an emulsified oils and fats composition good in soft feeling, dampish feeling and palate feeling, also suppressed in odor, comprising oils and fats, an emulsifier and water, with the diglyceride content of the oily phase at a specified level or higher, being a specified value or smaller in the diameter of each oil droplet in the aqueous phase and being a specified value or higher in consistency. CONSTITUTION:This composition comprises oils and fats, an emulsifier and water, having the following characteristics: the diglyceride content of the oily phase stands at >=5wt.% (pref. >=30wt.%), the average particle diameter of each oil droplet dispersed in the aqueous phase stands at <=10 (pref. <=1)mum; and consistency determined by a penetrometer stands at >=300 (pref. 320-400). Using this composition and materials for bread or cake, bread or cake is produced. |
