PURPOSE:To obtain a boiled and frozen noodle block having excellent thawing and reconstitution properties and suitable for thawing by spontaneous thawing and to obtain boiled and frozen noodles eatable by spontaneous thawing and suitable as a relish food or a small-sized food for in-flight meal. CONSTITUTION:This boiled and frozen noodle block 1 is a formed block having a groove 2 on the upper face and/or the lower face. The groove may be plural grooves crossing with each other at least at a point on the upper face and/or the lower face of the noodle block. The cross-point 4 of the grooves is preferably positioned at the center 3 of the upper face and/or the lower face of the noodle block. The groove 2 is formed in a shaping step by putting a prescribed amount of noodles in a shaping mold having a protruded ridge and freezing the noodles in the mold. The noodles are those to be served in cold state in general, e.g. Japanese buckwheat noodles (buckwheat noodles served on a bamboo platter), wheat noodles, cooled Chinese noodles, SOMEN (thin wheat noodles), HIYAMUGI (slender wheat noodles), etc. |
