PURPOSE:To obtain a dehydrated food provided with the same texture and functions as those of fried foods without using an oil by heating and dehydrating a food in a heated sugar alcohol melted product, etc., taking out the dehydrated food and subsequently cooling the food. CONSTITUTION:A food such as a pear or an apple is heated and dehydrated in a sugar alcohol aqueous solution or a sugar alcohol melted product prepared by heating a sugar alcohol comprising one or more kinds of sugar alcohols selected from erythritol, xylitol sorbitol and mannitol and having a directly reduced sugar content of <=0.8% e.g. at a temperature of <=100 deg.C, taken out, cooled, and further preferably coated with a powdery sugar alcohol to obtain the objective dehydrated food. |
