The invention relates to a process and to a filling device, suitable for said process, for filling vessels, in particular bottles, glasses, cans or the like, with a liquid, in particular a liquid foodstuff, for example drinks, oil or syrup, having a liquid valve which can be controlled by an actuating device and belongs to a probe which projects at least partially into the vessel to be filled in order to determine the filling level, the inflow of liquid being terminated, when a predetertimed filling level is reached, by closing the liquid valve, and the probe being designed as an oscillation element.
