The installation according to the invention comprises a moulding station (1) for containers (2) made from thermoplastic material equipped with draining holes, a station for filling the said containers with the meat (6), with bagging and pressing, a deaeration station (13), a station (16) for placing in food-grade wrappers equipped with non-return valves, a station (20) for placing under forced vacuum with closure of the wrappers, a cooking station with moulding and heat-shrinking of the thermoplastic containers (arrow 21) as well as recovery of the residual liquids in the wrappers, a cooling station, a station (23) for fitting non-return valves with suction and extraction heads for the residual liquids, and a station for discharging vacuum-sealed products which are ready for distribution.
