PURPOSE:To obtain a new compound, having a low possibility of causing diarrhea, etc., even by ingesting a large amount thereof due to a low hydrolytic ratio in the digestive system, remarkably improved selective proliferation properties for bifidus bacteria and high selectivity and capable of promoting the peristatic action of the intestines. CONSTITUTION:This new oligosaccharide is expressed by the formula Fru-Gal- Glc-Fru (Fru is fructose residue; Gal is galactose residue; Glc is glucose residue), e.g. a tetrasaccharide expressed by the formula. This compound is obtained by reacting a trisaccharide expressed by the formula Gal-Glc-Fru such as lactosucrose or raffinose with an enzyme having the fructose transfer activity [preferably beta-fructofuranosidase derived from Arthrobacter-sp. K-1 (FERM BP-3192)] preferably together with an invertase-deficient yeast. |
