PURPOSE:To provide the subject broiled fish excellent in quality with drip development suppressed to a minimum, also enhanced in impact resistance in its retort sterilization, transportation etc. CONSTITUTION:Broiled fish obtained so as to be 85-1500g in the hardness of its flesh is put in a retort container made of a flexible material and vacuum- packaged so as to come to <=25% in air content followed by conducting retort sterilization.
