Cleaning and preparation of mushrooms by: (a) sorting and grading, (b) cleaning by flotation in tank and (c) cutting lower part of foot of mushroom to set thickness parallel to rim. Appts. for cleaning and cutting mushrooms comprises a means (10) of displacing the mushrooms (26) one at a time at a given rate, a means (12) of automatically loading individual supports for the mushrooms, a means (70, 72, 74) of cutting the base of the feet, and a final cutting unit (95) separating the noble section of the mushroom from the remainder. Fragments and cut sections are removed (16). USE/ADVANTAGE - Prodn. on a commercial scale of mushrooms, partic. cultivated mushrooms, of dimensions such that the height of the mushroom (cap plus attached foot section) is equal to the cap dia. Treatment of mushrooms to produce desired product at high prodn. rate with efficient cleaning and recovery of cut detached section.
