Process for the preparation of a fraction containing a high alpha -lactalbumin content from milk serum, comprising first the heating of the milk serum at an adjusted pH and next or simultaneously with the heating, the fractionation of the milk serum with an ultrafiltration membrane having a molecular weight cut-off of 50,000 Da or a microfiltration membrane having a pore size of 0.01 - 0.5 mu m, which permit the alpha -lactalbumin to cross to the permeate side for a fractionation against beta -lactoglobulin, and the production of a fraction having a high alpha -lactalbumin content. Substitute for mother's milk and nutritional compositions comprising such a fraction.
