Purified polypeptides containing characteristic sequences common to pyrrolidone carboxylate peptidases (PYRases) from bacteria, for example Streptococcus pyogenes, or containing fragments of these sequences; antibodies recognising these polypeptides; polynucleotides encoding such polypeptides or fragments. Application especially to the overproduction of PYRases by insertion into a vector of a polynucleotide encoding a PYRase and then culture of a host cell transformed by means of such a vector, or to the production of nucleic acid probes specific for a bacterium having a PYRase gene, expressed or otherwise. These nucleic acid probes can be used as capture or detection probes according to conventional hybridisation techniques.
