A method is provided for heat-treating an electrically conductive, pumpable first medium such as foods. This involves said first medium being pumped through a line, while an electrical current is passed through said first medium, as a result of which said first medium is heated. To achieve this, according to the invention, the line has flowing through it a relatively thin layer of a second medium having characteristics which differ from those of the first medium. This relatively thin medium layer facilitates processing of the first medium. This relatively thin medium layer arises from the first medium itself or by the addition of a third medium. |
