The invention relates to an appliance for cooking food for dietary or other purposes at low temperature by the action of steam in vacuo. This appliance, consisting of a utensil (1) in the form of a closed container whereof the lid (3) and its gasket (4) are secured to the body (2) by any locking system (5), possesses a pressure-relief and safety valve (6), a vacuum gauge (7) and an indicator for indicating the cooking temperature (8). This appliance may be heated: - either directly on conventional household gas or electric heating appliances regulated by hand, - or on an automatic electric stove (50) specially designed for this purpose and programmable for temperature (55) and time (56).
