PURPOSE:To efficiently carry out the fermenting production of pyruvic acid at a low cost by culturing a specific variant strain having the ability to produce the pyruvic acid in a liquid culture medium and then collecting the produced and accumulated pyruvic acid. CONSTITUTION:A variant strain, belonging to the genus Escherichia, requiring lipoic acid for growth, deficient in H<+>-ATPase and further having the ability to produce pyruvic acid is cultured in a liquid culture medium. Thereby, the pyruvic acid is produced and accumulated in the resultant culture solution and then collected to afford the pyruvic acid by the fermentation method. |
