PURPOSE:To produce the subject compound in a short time and in a good yield by employing an erythritol-producing bacterium, continuously culturing the bacterium under maintaining a specific bacterial cell density, readily controlling the culturing operation during the culture and controlling the nitrogen content of the bacterial cells. CONSTITUTION:The production of the objective erythritol in a high yield is performed as follows; employing an erythritol-producing bacterium (e.g. Aureobasidium sp. SN-G42 strain), spreading the bacterial cells on an agar medium, subjecting the spread bacterial cells to a standing culture at 30 deg.C for 3 days, transferring the cultured product to a liquid medium, culturing the transferred bacteria at 30 deg.C for 3 days, adding the obtained seed cultured solution to a culture solution 2 in a culture tank 1, continuously culturing the bacteria under conditions comprising a temperature of 35 deg.C, a rotation rate of 500rpm and a pH of 4.2 while the nitrogen content of the bacterial cells is maintained to 2.5-4.5%, taking out the culture solution 2 from the culture tank 1, separating the supernatant from the culture solution 2 with a separator 3, and subsequently purifying the product by purification methods comprising a combination of ion exchange or adsorption chromatography, solvent extraction, crystallization, etc. |
