PURPOSE:To produce a roll-in margarine having good roll-in operability, and capable of giving improved rising, specific volume and inner layered structure, by using specific three emulsifying agents together. CONSTITUTION:A fat or oil, water and emulsifying agents are used as raw materials to produce a roll-in margarine by the conventional method. In the process, 0.5-10.0wt%, based on the composition, polyglycerol condensed ricinoleic acid ester, 0.01-5.0wt%, based on the composition, fatty acid monoglyceride and 0.01-5.0wt% sucrose ester of a fatty acid and/or 0.01-10.0wt%, based on the composition, polyglycerol ester of a fatty acid having >=3 polymerization degree are used as the emulsifying agents. |
