The present invention relates to a device for introducing dry salt into a meat-salting churn, the said churn operating under vacuum when the salt is introduced. It consists of a container (10) which contains a predetermined amount of dry salt and which includes, at its base, an outlet which is connected to one end of a substantially vertical tube (17), the other end of the said tube (17) being connected to a substantially horizontal part of a pipe (18) connected, via a first end, to a ventilation aperture (21) with an adjustable flow rate and, via the other end, to a first end of a pipeline (19), the second end (20) of which emerges inside the vat (3) of the said churn (1). <IMAGE>
