NEW MATERIAL:Chitosanase UTK having following physicochemical properties; Action: Acting on chitosan and hydrolyzing said substance to produce oligochitosan; Optimum pH: 5.6; pH stability: stable at pH 5-9; Optimum temperature: 50 deg.C; Thermal stability: stable to 40 deg.C. USE:An enzyme for decomposition of chitosan. Oligochitosan, substance obtained by hydrolysis of chitosan has antibacterial properties, antifungal properties and antineoplastic properties and is useful as a preservative for foods, an anti- plant pathogenic fungi drug, etc. PREPARATION:A strain belonging to Bacillus genus, e.g. Bacillus sp. UTK (FERM p-11442) is aerobically cultured. |
