PURPOSE: To obtain a soluble rice protein concentrate which is suitable to be used for a rice-based blend for baby foods by allowing α-amylase enzyme to act on pulverized source rice in a water-based medium and then treating the rice with a protease enzyme. CONSTITUTION: The production of a soluble rice protein concentrate from a rice material containing manganese, aluminum, selenium and phytic acid is carried out in the following processes. (a) Effective enzyme reaction by an α-amylase enzyme is carried out in a water-based medium under such conditions of pH and temp. in enough time that the source material with a decreased grain size can be digested to make the rice starch partly soluble to produce a liquid slurry. (b) The slurry is heated at 105 to 130 deg.C for 30 to 60sec. (c) A high-protein rice powder is separated from the rice carbohydrate which is changed soluble. (d) The slurry of the high-protein rice powder is treated with a protease enzyme to make the rice protein soluble. (e) The rice protein changed soluble is separated from the insoluble rice residue. Thus, the obtd. soluble rice protein concentrate shows improved digesting property and has a decreased amt. of manganese, aluminum selenium and phytic acid. |
