PURPOSE:To enable perfect sterilization of a liquid or solid food without causing the deterioration or degradation of the food by putting a food in a bag and pressurizing the rood by the compression of a pressure medium in a capsule placed in a pressure chamber. CONSTITUTION:A food 1 is sealed in an expandable and contractible bag 2 made of an elastic material such as vinyl resin or rubber. The bag is put into an expandable and contractible capsule 3 made of an elastomer. A pressure liquid medium 4 such as water is filled and sealed in the capsule 3, which is put into a pressure chamber 6a of a pressure vessel 6. A liquid-tight piston 7 is pressed into the pressure chamber 6a to pressurize the food 1 through the pressure medium 4. |
