PURPOSE:To offer a taste modifier having excellent stability and taste-modifying effect for a material having bitterness, astringency or harshness by constituting curculin contained in fruit (dried material) of curculigo latifolia as active ingredient. CONSTITUTION:A fruit of curculigo latifolia as a plant of Hypoxidaceae of Amaryllidaceae or dried material of said fruit is subjected to treatments such as crushing and making to paste and a taste modifier for a material having bitterness, astringency or harshness containing curculin is prepared. Another, water is added to a fruit of curculigo latifolia or dried material of said fruit, homogenized, washed with water and removed watersoluble part, then curculin is extracted from residue by saline water, etc., thus the extracted solution is desalinated, dried, further purified as necessary and curculin is obtained. Then, a taste modifier is prepared using said curculin as active ingredient. |
