The invention relates to a method for improving the appearance of shellfish, which consists in previously washing the shellfish in a manner which is known per se, in drying the shellfish, in applying onto the shellfish, in a thin and uniform manner, a wax which is approved for agrofoodstuff use, in redrying the shellfish in order to polymerise the wax and obtain a stable varnish, and, optionally, in rewetting the shellfish before packaging them or returning them into tanks.
