PURPOSE:To contrive improvement in taste and appearance, by previously frying a material with a high moisture content in an oil under reduced pressure in pretreating a fried food using the above-mentioned material. CONSTITUTION:A material with about >=50% moisture content is used and fried in an oil under a reduced pressure of <=500mmHg. The moisture content of the material is reduced to 5-50% based on the original value by the previous frying in oil. After the previous frying in the oil, the material is encased or fed to merchandise routes or further subjected to cooking processing, such as frying in oil, frozen and then supplied to distribution processes. |
