PURPOSE:To obtain the titled readily edible material having excellent flavor, stability and light taste free from bitterness, astringent taste such as acridity and an unpleasant feeling, by immersing soybeans containing fat and oil components in a hydrous alcohol, extracting harshness components and drying. CONSTITUTION:(A) Selected soybeans containing fat and oil components are used without peeling or peeled, optionally flaked into 0.1-2mm thickness into a flaky state and immersed in (B) 2-10pts.wt. based on 1pt.wt. component A of an edible alcohol (e.g. ethanol) having 4-70wt.% water content at 20-100 deg.C for 2min-40hr to extract harshness components such as saponin and isoflavone and to deactivate enzymes such as lipoxygenase. Then the material is separated from the hydrous alcohol by a method such as filtration, optionally washed with a proper solvent, then heated and dried under normal pressure or reduced pressure. |
