PURPOSE:To obtain the titled substance having agreeable odor and to recover solvent, by extracting defatted lecithin with a lower alcohol and spray-drying the extracted liquid by a specific method, thereby effecting simultaneous pulverization of lecithin and removal of solvent. CONSTITUTION:Defatted lecithin is extracted with a 1-4C alcohol (preferably methanol or ethanol). The extracted liquid is directly spray-dried with a closed- system spray dryer without removing the solvent from the extract. The extracted lecithin is pulverized simultaneous to the removal of the solvent to obtain the objective substance. The spray dryer is preferably a disc-type dryer to convert the extracted liquid into fine powder with an atomizer. The extraction with an alcohol is preferably carried out usually by contacting in alcohol with defatted lecithin at room temperature - 50 deg.C and repeating the contacting procedure.
