PURPOSE:To prepare a roasted fish paste having a smooth and glossy surface, without wrinkles and collapses, by molding a milled raw material, and by compressing the material immediately after dry heating, in a frame. CONSTITUTION:A milled raw material for a fish paste is molded, and directly or covered with a thin film having a smooth heat- and water-resistant surface, e.g. moisture proof cellophane or polypropylene film, and then directly or gelatinized and heated in a dry state in the stream of air at 100-180 deg.C for about 10-50min. The material is immediately or cooled for about 10min after the heating, covered with a retainer of so-called ''boiled fish paste shape'' having an inner smooth surface which is usually used, and cooled under pressure. |
