PURPOSE:In converting 5-benzylhydantoin to L-phenylalanine by the action of an enzymatic system of a bacterium, to obtain in high yield high-purity L-phenylalanine without using hydrochloric acid, etc., by keeping a pressure state with carbon dioxide. CONSTITUTION:In converting 5-benzylhydantoin to L-phenylalanine by the action of an enzymatic system of a bacterium [Arthrocacter (FERM P-7472), Pseudomonas (FERM P-7121), etc.] capable of converting 5-benzylhydantoin to L-phenylalanine, the reaction is carried out under pressure with carbon dioxide. After the reaction is over, a carbonate is removed from the reaction mixture by heating, etc. High-purity phenylalanine is thus obtained in high yield without using an acid such as hydrochloric acid. etc.
