A deep-fat fryer having multiple oil convection and gas burners of the burner rail type, in which the lateral walls 11, 12 of the vessel 3 located above the burners 4 act as primary heat exchange surfaces with the burned gases of these burners, is characterised in that, to ensure an intensive heat extraction from the burned gases leaving the burner rails before their release, it moreover comprises primary heat exchange surfaces 15 represented by vertical 11 and tilted 12 lateral walls of the vessel 3, secondary 16 and tertiary 17 heat exchange surfaces which, constituted respectively by a part of the front wall of the vessel 3 and by the walls of one or more leaktight tubes 18 going through the oil mass, lengthen the thermal exchange between the burned gases and the oil 7 in the vessel 3. <IMAGE>
