PURPOSE:To prevent the diffusion of a component between the spherical jelly and the coagulation solution, by using a dripping liquid containing the same component such as fruit juice as the component of the coagulation solution, and forming a spherical jelly. CONSTITUTION:The dripping liquid prepared by adding fruit juice, etc. to sodium alginate and/or lowly methoxylated pectin is dripped through the orifices 2 of the tank 1. Separately, a coagulation solution B is prepared by mixing a calcium salt with the same amount of fruit juice, etc. as that of the juice in the dripping liquid, and is stored in the tank 3. The spherical jelly C and the coagulation solution B produced in the tank 3 are poured on the separator 5 and separated from each other. The spherical jelly C is collected in the container 6, and the separated coagulation solution B' is circulated with a pump to the coagulation tank 3. |
